Three Cheese Grits

Method

Shrimp & Sausage Preparation

  1. 1

    Cook Andouille Sausage

In a large skillet over medium heat, add the olive oil. Once heated, add the sliced Andouille sausage and cook for about 5 minutes until browned. Remove sausage from the skillet and set aside.

  2. 2

    Sauté Vegetables

In the same skillet, add the minced garlic, diced onion, and diced red bell pepper. Sauté for about 4-5 minutes until the onions are translucent and the peppers are tender.

  3. 3

    Cook Shrimp

Add the shrimp to the skillet along with the Cajun seasoning, salt, and black pepper. Cook for about 3-4 minutes until the shrimp are pink and opaque. Return the sausage to the skillet and mix well.

Three Cheese Grits Preparation

  1. 4

    Prepare Grits

In a medium saucepan, bring 3 cups of water to a boil. Gradually whisk in the grits and reduce the heat to low, stirring frequently. Cook for about 20-25 minutes until the grits are thick and creamy.

  2. 5

    Add Dairy

Once the grits are cooked, stir in the milk, butter, and cream cheese until well combined. Add the shredded cheddar and grated Parmesan cheese, mixing until melted and smooth.

  3. 6

    Season Grits

Season the cheese grits with salt and black pepper to taste.
