Method

Corned Beef Preparation

  1. 1

    Cook the Corned Beef

Place the corned beef brisket in a large pot and cover it with water. Bring to a boil, then reduce heat to a simmer. Cook for about 3 hours or until tender. Remove from pot and let it rest before slicing.

  2. 2

    Slice the Corned Beef

Once the brisket has cooled for a few minutes, slice it thinly against the grain.

Rueben Sauce

  1. 3

    Make the Rueben Sauce

In a small bowl, combine mayonnaise, ketchup, horseradish, and Worcestershire sauce. Mix well and set aside.

Assemble the Sandwich

  1. 4

    Prepare the Bread

Butter one side of each slice of marble rye bread.

  2. 5

    Layer the Ingredients

On the unbuttered side of two slices of bread, layer the sliced corned beef, sauerkraut, Swiss cheese slices, and a generous amount of Rueben sauce.

  3. 6

    Top the Sandwich

Place the remaining two slices of bread on top, buttered side facing out.

Grilling the Sandwich

  1. 7

    Grill the Sandwich

Heat a skillet over medium heat. Place the sandwiches in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serving

  1. 8

    Serve the Reuben

Once grilled, remove the sandwiches from the skillet, slice in half, and serve hot with extra sauerkraut or sauce on the side if desired.
