Crust Preparation

    Prepare the Crust

    In a medium bowl, combine graham cracker crumbs and sugar. Stir in melted butter until the mixture resembles wet sand.

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes until set. Remove from the oven and let it cool.

Cheesecake Filling Preparation

    Mix the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue mixing until combined.

    Add the vanilla extract and sour cream, mixing until incorporated. Then add the eggs one at a time, mixing well after each addition.

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Baking and Cooling
