Pulled Pork Preparation

    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, smoked paprika, garlic powder, and onion powder. Ensure the pork is evenly coated.

    Cook the Pork

    Place the seasoned pork shoulder in a slow cooker. Add apple cider vinegar and water. Cover and cook on low for 8-10 hours or until the pork is tender and easily shreds with a fork.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the cooker to soak up the juices.

Blueberry BBQ Sauce Preparation

    Cook the Sauce

    In a medium saucepan, combine blueberries, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, smoked paprika, and salt. Bring to a simmer over medium heat.

    Blend the Sauce

    Once the mixture comes to a simmer, reduce heat and let it cook for about 15 minutes until thickened. Use an immersion blender to blend the sauce until smooth.

    Store and Cool

    Remove from heat and let the sauce cool. Store in an airtight container in the refrigerator until ready to use.

Cole Slaw Preparation

    Mix the Slaw

    In a large bowl, combine shredded cabbage and grated carrot.

    Make the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Pour the dressing over the cabbage mixture and toss until everything is well coated. Cover and refrigerate for at least 30 minutes before serving.

Assembly

    Assemble the Sandwich

    To serve, place a generous portion of pulled pork on the bottom half of each kaiser bun. Top with blueberry BBQ sauce and a scoop of cole slaw. Place the top half of the bun on and serve immediately.
