Preparation of Ingredients

Slice Vegetables
Thinly slice the sweet onion and bell pepper. Set aside.

Prepare Cheese Fondue
In a saucepan, combine the milk, white wine, and minced garlic. Heat gently over medium heat until warm.

Shred Cheese
Shred the cheddar and Gruyère cheese and set aside.

Sauté Vegetables
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the sliced onions and bell peppers, sautéing until they are soft and caramelized, about 5-7 minutes.

Cook Ribeye
Add the shaved ribeye to the skillet with the sautéed vegetables, cooking until the beef is browned and cooked through, about 3-5 minutes. Season with salt and pepper to taste.

Make Cheese Fondue
Once the milk and wine mixture is warm, gradually add in the shredded cheese, stirring continuously until melted and smooth. Mix in cornstarch to thicken the fondue.

Prepare Rolls
Slice the Amoroso rolls in half and lightly toast them if desired.

Layer the cooked ribeye and vegetable mixture into each roll, then drizzle or dip with the cheese fondue.
