Preparation

    Clean the Mussels

    Rinse the mussels under cold water, removing any beards and sand. Discard any mussels that are open or damaged.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and place on paper towels to drain excess fat. Once cool, crumble the bacon into small pieces.

Cooking

    Prepare the Sauce

    In a bowl, mix together soy sauce, sriracha sauce, rice vinegar, honey, minced garlic, and minced ginger until well combined.

    Cook the Mussels

    In the same skillet with the bacon fat, add the cleaned mussels and pour the sauce over them. Cover the skillet and cook over medium-high heat for about 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

Serving

    Assemble the Bowl

    Once the mussels are cooked, transfer them to a serving bowl. Sprinkle crumbled blue cheese, crispy bacon, sliced green onions, and chopped cilantro on top.

    Serve the mussels hot, with extra sauce on the side if desired.
