Method

Crust Preparation

  1. 1

    Mix the Crust Ingredients

In a medium bowl, combine the gluten-free graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

  2. 2

Press the Crust into the Pan

Firmly press the crust mixture into the bottom and up the sides of a 9-inch pie pan. Use the back of a measuring cup to pack it tightly.

  3. 3

    Pre-bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from oven and let cool.

Filling Preparation

  1. 4

    Prepare the Filling

In a large bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well combined.

  2. 5

    Pour Filling into Crust

Pour the filling mixture into the pre-baked crust, spreading it evenly.

  3. 6

    Bake the Pie

Bake the pie in the oven at 350°F (175°C) for 10-12 minutes, or until the filling is set. Remove from oven and cool to room temperature.

Topping Preparation

  1. 7

    Whip the Cream

In a mixing bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

  2. 8

    Top the Pie

Spread the whipped cream over the cooled pie evenly. Sprinkle lime zest on top for garnish.

  3. 9

    Chill the Pie

Refrigerate the pie for at least 2 hours before serving to allow the filling to set completely.
