Corned Beef Hash

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse them under cold water and drain.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes or until golden brown and tender, stirring occasionally.

    Add Vegetables

    While the potatoes are cooking, chop the onion and bell pepper. Once the potatoes are cooked, add the chopped onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened.

    Add Corned Beef

    Dice the corned beef brisket into small pieces and add it to the skillet. Stir everything together and cook for another 5 minutes, allowing the flavors to blend. Season with salt and black pepper to taste.

    Cook the Eggs

    In a separate pan, heat the butter over medium heat. Crack the eggs into the pan and cook to your preferred doneness (sunny-side up, over easy, etc.).

    Toast the Bread

    While the eggs are cooking, toast the slices of your choice of bread.

    Plate the Dish

    Once everything is cooked, serve the corned beef hash on a plate, top with the eggs, and serve with the toasted bread on the side.
