Method

Chicken

  1. 1

    Prepare the Chicken

In a bowl, marinate the chicken breasts in buttermilk for at least 1 hour (or overnight in the refrigerator for best results).

  2. 2

    Dredge the Chicken

In a separate bowl, combine flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Remove the chicken from the buttermilk, allowing excess to drip off, and dredge in the seasoned flour mixture, ensuring even coverage.

  3. 3

    Fry the Chicken

Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Waffles

  1. 4

    Combine Dry Ingredients

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

  2. 5

    Combine Wet Ingredients

In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.

  3. 6

    Make the Waffle Batter

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are fine.

  4. 7

    Cook the Waffles

Preheat your waffle iron according to the manufacturer's instructions. Pour the batter into the waffle iron and cook until golden brown, about 4-5 minutes.

Spicy Maple Syrup

  1. 8

    Prepare the Syrup

In a small saucepan over low heat, combine maple syrup and cayenne pepper. Stir until heated through. Remove from heat and set aside.

Sausage Gravy

  1. 9

    Cook the Sausage

In a skillet over medium heat, cook breakfast sausage until browned and fully cooked, breaking it apart as it cooks.

  2. 10

    Make the Gravy

Sprinkle the flour over the cooked sausage and stir to combine, cooking for another minute. Gradually pour in the milk, stirring continuously until the gravy thickens. Season with salt and black pepper.
