    In a large skillet, heat olive oil over medium heat. Add the potatoes and cook for about 10 minutes, stirring occasionally.

    Chop the onion and bell pepper. Add them to the skillet with the potatoes and continue cooking for another 10 minutes or until the potatoes are golden brown.

    Sprinkle salt, black pepper, and paprika over the mixture. Stir well and cook for an additional 2-3 minutes.

    In a mixing bowl, crack the eggs and add milk, salt, and black pepper. Whisk until fully combined.
