Method

Preparation of Meats

    Trim excess fat from the beef brisket and rub it with a mixture of salt, black pepper, smoked paprika, garlic powder, and onion powder. Let it rest for 30 minutes.

    Remove the silver skin from the back of the ribs and apply a dry rub of salt, black pepper, and smoked paprika. Let it marinate for at least 1 hour.

    Prepare the Chicken Thighs

    Season the chicken thighs with salt, black pepper, and garlic powder. Let them sit for 30 minutes before cooking.

Barbecue Sauce Preparation

    Make the Barbecue Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Simmer over medium heat for 10 minutes, stirring occasionally.

Cooking the Meats

    Cook the Beef Brisket

    Smoke the brisket in a smoker at 225°F for about 10-12 hours until it reaches an internal temperature of 190°F. Baste with barbecue sauce in the last hour of cooking.

    Cook the Pork Ribs

    Grill the ribs on a barbecue at medium heat for 3-4 hours, turning occasionally. Brush with barbecue sauce during the last 30 minutes.

    Grill the chicken thighs over medium heat for 15-20 minutes, turning occasionally, until they reach an internal temperature of 165°F. Baste with barbecue sauce during the last 5 minutes.
