Method

Cooking the Pasta

  1. 1

    Boil the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta cooking water. Set aside.

  3. 3

    Drain Pasta

Drain the spaghetti in a colander and return it to the pot.

Preparing the Sauce

  1. 4

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 5

    Mix Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining the Dish

  1. 6

    Combine Pasta with Pancetta

Add the drained spaghetti to the skillet with the pancetta and toss to combine, allowing the spaghetti to absorb some of the pancetta fat.

  2. 7

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If needed, add reserved pasta water a little at a time until desired creaminess is reached.

  3. 8

    Season and Serve

Taste and adjust seasoning with salt and more black pepper if desired. Serve immediately, garnished with chopped fresh parsley.
