Cooking the Pasta

Boil the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water. Set aside.

Drain Pasta
Drain the spaghetti in a colander and return it to the pot.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Mix Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining the Dish

Combine Pasta with Pancetta
Add the drained spaghetti to the skillet with the pancetta and toss to combine, allowing the spaghetti to absorb some of the pancetta fat.

Season and Serve
Taste and adjust seasoning with salt and more black pepper if desired. Serve immediately, garnished with chopped fresh parsley.
