Cut the chicken breasts into strips and place them in a bowl. Pour the buttermilk over the chicken, ensuring all pieces are coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for better flavor.

In a shallow dish, combine the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix well to ensure an even distribution of spices.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Use a thermometer to ensure the oil reaches 350°F (175°C) for frying.

Bread the Chicken
Remove chicken strips from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing gently to adhere the breading. Shake off any excess flour.

Carefully place the breaded chicken tenders in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
