Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Prepare the Sauce Mixture
In a mixing bowl, beat the eggs and mix in the grated Parmesan cheese and black pepper until well combined. Set aside.

Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest. Quickly add the hot spaghetti to the skillet with the pancetta (with the heat off) and toss to combine.

Add Sauce
Pour the egg and cheese mixture over the pasta, tossing quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Garnish and Serve
Serve immediately, garnished with chopped fresh parsley and extra Parmesan cheese if desired. Enjoy your Pasta Carbonara!
