In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar over medium heat. Stir until the sugar dissolves and the mixture is heated, but not boiling.

Remove from heat and stir in the vanilla extract. Allow the base to cool at room temperature, then refrigerate for at least 2 hours or until completely chilled.

Divide the base into different bowls depending on the number of flavors you want to create. For chocolate gelato, add cocoa powder and mix well. For strawberry gelato, add pureed strawberries. For coffee gelato, stir in brewed coffee. For mint gelato, steep mint leaves in hot milk mixture before combining with the base.

Churn the Gelato
Pour the flavored bases into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until the gelato reaches a soft-serve consistency.
