Base Preparation

    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar over medium heat. Stir until the sugar dissolves and the mixture is heated, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are light and frothy. Slowly pour a small amount of the hot milk mixture into the egg yolks, whisking continuously to temper the eggs.

    Combine Mixtures

    Gradually add the egg yolk mixture back into the saucepan with the remaining milk mixture. Stir continuously over low heat until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Allow the base to cool at room temperature, then refrigerate for at least 2 hours or until completely chilled.

    Flavor the Gelato

    Divide the base into different bowls depending on the number of flavors you want to create. For chocolate gelato, add cocoa powder and mix well. For strawberry gelato, add pureed strawberries. For coffee gelato, stir in brewed coffee. For mint gelato, steep mint leaves in hot milk mixture before combining with the base.

    Churn the Gelato

    Pour the flavored bases into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until the gelato reaches a soft-serve consistency.

    Transfer the churned gelato into airtight containers and freeze for at least 4 hours to firm up before serving.
