Preparation of Chicken
- 1
Spice the Chicken
Season the chicken breast with your choice of spices (such as chili powder, garlic powder, paprika, and salt).
- 2
Cook the Chicken
Grill or pan-sear the seasoned chicken breast over medium heat for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.
Cooking the Rice
- 3
Rinse the Rice
Rinse 1 cup of basmati rice under cold water until the water runs clear to remove excess starch.
- 4
Cook the Rice
In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
- 5
Fluff the Rice
Remove from heat and let it sit, covered, for 5 minutes. Then fluff the rice with a fork.
Preparing the Smashed Avocado
- 6
- 7
Assembling the Bowl

Layer Ingredients
In a bowl, start with a base of steamed basmati rice, followed by black beans, sliced spicy chicken, smashed avocado, and a generous serving of pico de gallo on top.
