Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is the right temperature.

Fry the Potatoes
Dip the fries into the batter and carefully lower them into the hot oil. Fry in batches until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels.

Peel the sweet potatoes and cut them into thin, even strips.

In a bowl, toss the sweet potato strips with olive oil, salt, paprika, and black pepper until evenly coated.

For baked fries, spread them out in a single layer on a baking sheet and bake at 425°F (220°C) for 25-30 minutes, flipping halfway through. For frying, heat oil to 350°F (175°C) and fry until golden, about 3-5 minutes.
