Prepare Chicken
Season the chicken breasts with salt and black pepper. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

Prepare Vegetables
While the chicken is cooking, chop the red bell pepper and red onion. Halve the cherry tomatoes. In the same skillet, add the remaining tablespoon of olive oil and sauté the vegetables for 5-6 minutes until they are tender. Season with salt and pepper.

Combine Ingredients
In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, and crumbled feta cheese. Drizzle with balsamic vinegar and honey, then toss everything together gently.
