1. Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent, about 5 minutes.

2. Add the Vegetables

Stir in the chopped bell pepper, diced zucchini, and sliced mushrooms. Cook for another 5-7 minutes until the vegetables are slightly softened.

3. Incorporate the Tomatoes and Broth

Add the canned diced tomatoes (including juice) and vegetable broth to the pot. Stir well to combine.

4. Add the Chickpeas and Seasoning

Stir in the drained chickpeas, Italian seasoning, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer.

5. Add Spinach

After simmering for 10 minutes, add the fresh spinach. Stir until the spinach wilts, about 2-3 minutes.
