Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix; the batter should be slightly lumpy.

If desired, gently fold in chocolate chips or blueberries into the batter.
Cooking

Preheat Griddle
Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes
Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown.

Remove pancakes from the griddle and keep warm. Serve with maple syrup, fresh fruit, or any desired toppings.
