Method

Prepare the Batter

  1. 1

    Whisk the Batter

In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar until well combined.

Prepare the Filling

  1. 2

    Mix the Cream Cheese

In a separate bowl, soften the cream cheese. If using raspberry or huckleberry jam, mix in 1/4 cup of the jam into the cream cheese until evenly combined. For lemon curd, use as is.

Assemble the French Toast

  1. 3

    Stuff the Bread

Spread a generous amount of the cream cheese mixture onto one slice of Texas toast. Top with another slice to create a sandwich. Repeat for the remaining slices.

Cook the French Toast

  1. 4

    Dip and Cook

Preheat a skillet over medium heat and add a little butter. Dip each stuffed sandwich in the batter, coating both sides. Place in the skillet and cook for 3-4 minutes on each side until golden brown.

Serve

  1. 5

    Plate and Garnish

Once cooked, remove from the skillet, dust with powdered sugar, and serve warm with maple syrup and additional toppings of choice.
