Quinoa Black Bean Salsa

Cilantro Lime Rice

Quinoa Black Bean Salsa

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork.

    Combine Ingredients

    In a large bowl, mix cooked quinoa, black beans, diced red bell pepper, diced red onion, chopped cilantro, lime juice, salt, and pepper. Stir until well combined.

Pickled Onions

    Prepare Pickling Solution

    In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat over medium heat until the sugar and salt dissolve.

    Pickle the Onions

    Place sliced red onion in a jar and pour the pickling solution over the onions. Let it sit for at least 30 minutes to pickle.

Refried Beans

    Sauté Onion and Garlic

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until the onion is translucent.

    Cook Beans

    Add pinto beans, cumin, salt, and pepper to the skillet. Cook for about 5 minutes, mashing the beans with a fork or potato masher until desired consistency.

Cilantro Lime Rice

    Cook Rice

    In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until the water is absorbed.

    Add Flavorings

    Once rice is cooked, fluff with a fork and mix in chopped cilantro, lime juice, and salt.

Assemble Tacos

    Warm Tortillas

    In a dry skillet, warm corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Build Tacos

    Layer quinoa black bean salsa, pickled onions, crumbled feta, and sliced avocado on each tortilla. Add optional cooked chicken or carnitas if desired.

    Serve

    Serve tacos with a side of refried beans and cilantro lime rice.
