Preparing Quinoa Black Bean Corn Salad

Cook Quinoa
In a small pot, bring 1 cup of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it cool.

Combine Salad Ingredients
In a large bowl, combine the cooked quinoa, black beans, corn kernels, cherry tomatoes, lime juice, olive oil, cumin, salt, and black pepper. Mix well and set aside.

Cook Chorizo
In a skillet over medium heat, cook the chorizo for about 5-7 minutes, breaking it apart with a spoon until browned and cooked through.

Prepare Tostadas
In a separate skillet, lightly toast the corn tortillas over medium heat until slightly crispy, about 1-2 minutes per side.

On each toasted tortilla, layer the scrambled chorizo and eggs, followed by a generous scoop of quinoa black bean corn salad, and sprinkle with shredded jack cheese. Top with fresh cherry tomatoes and chopped cilantro.
