Preparing Quinoa Black Bean Corn Salad

    In a small pot, bring 1 cup of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it cool.

    In a large bowl, combine the cooked quinoa, black beans, corn kernels, cherry tomatoes, lime juice, olive oil, cumin, salt, and black pepper. Mix well and set aside.

Cooking Chorizo and Eggs

    Cook Chorizo

    In a skillet over medium heat, cook the chorizo for about 5-7 minutes, breaking it apart with a spoon until browned and cooked through.

    In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the cooked chorizo. Cook, stirring gently until the eggs are scrambled and fully cooked, about 3-4 minutes.

Making Guacamole
