    Cook the Meats

    In a skillet over medium heat, add the olive oil. Once hot, add the bacon slices and cook until crispy. Remove and drain on paper towels. In the same skillet, add the chorizo and sausage, cooking until browned, about 5-7 minutes. Finally, add the ham for 1-2 minutes until heated through. Chop all the meats into bite-sized pieces.

    Prepare the Eggs

    In a mixing bowl, crack the eggs and add salt and pepper. Whisk together until well combined.

    Cook the Omelet

    In the same skillet used for the meats, reduce the heat to medium-low. Pour in the beaten eggs and let them cook undisturbed for about 2-3 minutes, or until the edges start to set.

    Add the Fillings

    Once the eggs are partially cooked, sprinkle the cooked meat mixture evenly over one half of the omelet. Then, add the cheddar and feta cheese on top of the meats.

    Fold and Finish Cooking

    Carefully fold the other half of the omelet over the fillings using a spatula. Let it cook for an additional 2-3 minutes or until the cheese melts and the eggs are fully cooked.

    Garnish and Serve

    Slide the omelet onto a plate and garnish with fresh parsley if desired. Cut in half and serve immediately.
