Preparing the Homemade Spanish Sauce

Sauté the Vegetables
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Add Garlic and Peppers
Stir in the minced garlic and diced green bell pepper. Cook for another 2-3 minutes until the peppers soften.

Add Tomatoes and Spices
Add the diced tomatoes, chili powder, cumin, salt, and black pepper. Stir well and let the mixture simmer for about 10-15 minutes until it thickens slightly.
Cooking the Eggs and Hashbrowns

Cook the Hashbrowns
In a separate skillet, prepare hashbrowns according to package instructions or cook fresh hashbrowns until crispy and golden brown. Set aside.

Assembling the Dish

Warm the Tortilla
In a dry skillet or microwave, warm the flour tortilla until pliable.

Plate the Dish
On a plate, place the warm tortilla, spread 1 cup of refried beans on top, add the cooked eggs, and spoon over the homemade Spanish sauce. Serve with hashbrowns on the side.
