    Mix Dry Ingredients

    In a large mixing bowl, combine the gluten-free oat flour, protein powder, baking powder, and a pinch of salt. Whisk together until well blended.

    Combine Wet Ingredients

    In a separate bowl, mix the almond milk, egg, maple syrup, and vanilla extract. Whisk until fully combined.

Cooking

    Combine Mixtures

    Slowly pour the wet ingredients into the dry ingredients while stirring gently. Mix until just combined; do not overmix. If desired, fold in chia seeds, blueberries, or sliced banana.

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with coconut oil or cooking spray.

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 3-4 minutes), then flip and cook for another 2-3 minutes until golden brown.
