    Wash and peel the russet potatoes. Cut them into even sticks, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch, then pat them dry with paper towels.

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to make the fries crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Carefully add a handful of the soaked and dried potato sticks to the hot oil. Fry them for about 5-7 minutes or until they turn golden brown. Avoid overcrowding the pot, as this can lower the oil temperature.
