Prepare Potatoes

    Dice and Boil

    Begin by peeling the russet potatoes and dicing them into small, even cubes. Place them in a pot of salted water and bring to a boil. Cook for about 10 minutes or until just tender but not falling apart.

    Sauté

    Drain the potatoes and set aside. In a large skillet, melt the butter over medium heat. Add the boiled potatoes, salt, and black pepper. Sauté them until they are golden brown and crispy, about 5-7 minutes.

Cook Corned Beef Hash

    Add Vegetables and Beef

    Add the diced onion and green bell pepper to the skillet with the potatoes. Sauté for an additional 3-4 minutes until the vegetables are softened. Then, add the diced corned beef and stir everything together. Cook for another 5-7 minutes until heated through and the edges are crispy.

Cook Eggs

    Fry the Eggs

    In a separate non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet, taking care not to break the yolks. Season with salt and black pepper. Cook the eggs to your desired doneness, either sunny-side up or over-easy, about 3-4 minutes.

    Once everything is cooked, serve a generous scoop of the corned beef hash on a plate and top with the fried eggs. Enjoy hot!
