Prepare the Chorizo
In a skillet over medium heat, cook the chorizo sausage until it is browned and fully cooked, about 8-10 minutes. Stir occasionally to crumble the sausage evenly. Once cooked, remove from heat and set aside.

Grill the English Muffins
Slice the English muffins in half and toast them lightly on a grill or in a toaster until golden brown. Set aside.

Poach the Eggs
Bring a pot of water to a gentle simmer. Add a splash of vinegar (optional) to help the egg whites set. Crack each egg into a small bowl and gently slide them into the simmering water, cooking for about 3-4 minutes until the whites are set but the yolks are still runny. Remove the eggs with a slotted spoon and set aside.

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat until it is completely liquid. Remove from heat and let it cool slightly.

Whisk the Egg Yolks
In a heatproof bowl, whisk together the egg yolks and lemon juice until they are pale and slightly thickened.

Add Chipotle and Season
Stir in the chipotle in adobo sauce. Season with salt and pepper to taste. Remove from heat and keep warm until ready to serve.
