Prepare Tortilla Chips

    Fry the Tortillas

    Cut the corn tortillas into triangles. Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the tortilla triangles in batches and fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Cook the Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper. Heat butter in a non-stick skillet over medium heat. Pour in the egg mixture and stir gently with a spatula until the eggs are just set but still creamy, about 3-5 minutes. Remove from heat.

Assemble Chilaquiles

    Layer the Ingredients

    On a large serving plate, spread a generous layer of tortilla chips. Top with scrambled eggs, crumbled feta cheese, and guacamole. Drizzle with your choice of red or green sauce and dollop with sour cream. Garnish with fresh cilantro.
