Prepare the egg mixture
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Prepare the coconut topping
Spread the shredded coconut on a plate or shallow dish. This will be used to crust the French toast.
Cooking

Coat the Texas toast
Dip each slice of Texas toast into the egg mixture, ensuring both sides are well coated. Allow excess mixture to drip off.

Crust the toast
Immediately press each coated slice into the shredded coconut, covering both sides evenly.

Heat a non-stick skillet or griddle over medium heat and add a little butter or oil. Cook each slice for about 3-4 minutes on each side, or until golden brown and the coconut is toasted.
