Method
Simit Preparation
Make the Dough
In a large bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy. Add in flour and salt, and mix to form a dough.
Knead the Dough
Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise for 1 hour or until doubled in size.
Shape the Simit
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 6 equal pieces. Roll each piece into a long rope and form a circle, twisting the ends together.
Prepare for Baking
In a shallow bowl, mix grape molasses with 1 cup of water. Dip each simit into the molasses mixture, then coat with sesame seeds.
Bake
Place the simit on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown.
Whipped Feta Cream Cheese Preparation
