Preparation
Prepare the Salmon
Rinse the salmon fillet under cold water and pat it dry with paper towels.
Make the Cure
In a bowl, mix together the coarse sea salt, granulated sugar, chopped dill, crushed black peppercorns, and lemon zest.
Apply the Cure
Spread half of the salt and sugar mixture onto a piece of plastic wrap. Place the salmon on top, skin-side down, then cover with the remaining cure mixture.
Wrap and Refrigerate
Wrap the salmon tightly in the plastic wrap and place it in a dish. Weigh it down with another dish or a heavy can. Refrigerate for 48 hours.
Serving
Slice and Serve
After 48 hours, unwrap the salmon, rinse off the cure, and pat dry. Slice thinly and serve with crackers, bread, or salad.
