Prepare the Dough

In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise

Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Simits

Preheat your oven to 400°F (200°C). Punch down the dough and divide it into 6 equal pieces. Roll each piece into a rope and form a circle, pinching the ends to seal.

Prepare the Topping

In a shallow dish, pour grape molasses. In another dish, place sesame seeds. Dip each simit into the grape molasses then coat them with sesame seeds.

Final Rise

Place the coated simits on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.

Bake

Bake the simits in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and let them cool slightly before serving.
