    Chop the Vegetables

    Dice the carrots, zucchini, bell peppers, and eggplant into bite-sized pieces. Finely chop the onion and mince the garlic cloves.

    Prepare the Chickpeas

    If using canned chickpeas, drain and rinse them thoroughly.

Cooking

    Sauté the Aromatics

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

    Add the Spices

    Sprinkle in the ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Stir well to coat the onions and garlic with the spices, cooking for 1-2 minutes until fragrant.

    Combine the Vegetables

    Add the chopped carrots, zucchini, bell peppers, and eggplant to the pot. Stir to combine and allow the vegetables to cook for about 5 minutes, stirring occasionally.

    Add the Liquids

    Pour in the vegetable broth and canned diced tomatoes, stirring well to incorporate everything. Bring the mixture to a gentle simmer.

    Simmer the Tagine

    Cover the pot and let the tagine simmer for about 20-25 minutes, or until the vegetables are tender, stirring occasionally.

    Finish the Dish

    Once the vegetables are tender, add the cooked chickpeas and chopped fresh parsley. Stir gently and cook for an additional 5 minutes to heat through.
