Method
Burger Directions
- 1
Prepare the Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until quinoa is fluffy and water is absorbed. Allow to cool slightly.
- 2
Mash the Black Beans
Drain and rinse the can of black beans. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- 3
Mix the Ingredients
Add the cooked quinoa, finely chopped onion, minced garlic, breadcrumbs, cumin, smoked paprika, salt, and black pepper to the mashed black beans. Mix until well combined.
- 4
Form the Patties
Divide the mixture into 4 equal portions and shape each portion into a patty.

- 6
Assemble the Burger
Toast the burger buns if desired. Place a lettuce leaf on the bottom bun, add the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
