Soak the Bulgar Wheat
In a medium bowl, add 1 cup of bulgar wheat and cover it with boiling water. Let it soak for about 20-30 minutes until it becomes tender. Drain any excess water and set aside.

Chop the Herbs and Vegetables
Finely chop 1 bunch of fresh parsley and 1 cup of fresh mint leaves. Dice the 2 medium tomatoes and chop the small red onion. Combine all chopped ingredients in a large mixing bowl.

Prepare the Dressing
In a small bowl, whisk together 1/4 cup of extra virgin olive oil and 1/4 cup of fresh lemon juice. Season with salt and black pepper to taste.

Dress the Salad
Pour the dressing over the salad mixture and toss gently to ensure all ingredients are well coated.
Serving

Chill and Serve
Cover the tabbouleh salad and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled as a side dish or light meal.
