Falafel Preparation

Soak Chickpeas
Soak the chickpeas in water overnight. Drain and rinse before using.

Make Falafel Mixture
In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together.

Form Falafel Balls
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry Falafel
Heat oil in a deep skillet over medium heat. Carefully add the falafel balls in batches and fry until golden brown (about 3-4 minutes per side). Drain on paper towels.

Prepare Vegetables
Wash and chop the lettuce into bite-sized pieces. Dice the tomato.

Assemble Wraps
Take a piece of pita bread and fill it with a few falafel balls, lettuce, tomato, and drizzle with tahini sauce.

Serve
Wrap the pita and serve immediately with extra tahini sauce on the side, if desired.
