Falafel Preparation

Soak the Chickpeas
Place the dried chickpeas in a bowl and cover them with water. Allow them to soak overnight (or at least 8 hours) until they are soft.

Blend Ingredients
Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, chopped onion, minced garlic, fresh parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture becomes a coarse paste.

Add Flour
Transfer the mixture to a bowl and stir in the flour until just combined. If the mixture is too wet, add a bit more flour.

Shape the Falafel
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter. Place them on a plate or tray.

Fry the Falafel
Carefully add the falafel balls to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove with a slotted spoon and drain on paper towels.

Taste the tahini sauce and add salt to taste. Adjust lemon juice as needed.
