    Chop the dark chocolate into small pieces and place it in a heat-proof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.

    Separate the Eggs

    Carefully separate the egg yolks from the egg whites, placing the yolks in a large bowl and the whites in a separate mixing bowl.

    Whip the Egg Yolks

    Add half of the granulated sugar (50 grams) to the egg yolks. Using a hand mixer or whisk, beat the yolks and sugar together until the mixture is pale and creamy.

    Combine Chocolate and Yolks

    Pour the melted chocolate into the egg yolk mixture and stir until fully combined. Add the vanilla extract and a pinch of salt, mixing well.

    Whip the Egg Whites

    In the bowl with the egg whites, use a hand mixer to beat the whites until soft peaks form. Gradually add the remaining sugar (50 grams) while continuing to beat until stiff peaks form.

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

    Fold the whipped cream into the chocolate mixture until just combined, ensuring a light and airy texture.

    Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.
