Falafel Preparation

    Rinse and Drain Chickpeas

    Open the can of chickpeas, rinse them under cold water, and drain well.

    Prepare the Herb Mixture

    In a food processor, combine the rinsed chickpeas, parsley, cilantro, onion, and garlic. Pulse until the mixture is coarsely blended.

    Add Spices and Flour

    Add the ground cumin, ground coriander, baking powder, salt, black pepper, and flour to the food processor. Pulse until everything is well combined and forms a thick paste.

    Chill the Mixture

    Transfer the mixture to a bowl, cover, and refrigerate for about 30 minutes to firm up.

    Shape the Falafel

    After chilling, take small portions of the mixture and shape them into balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    In a large skillet, heat vegetable oil over medium-high heat. Carefully add the falafel balls to the oil and fry until golden brown, about 4-5 minutes on each side. Remove and drain on paper towels.

    In a bowl, whisk together the tahini, lemon juice, minced garlic, water, and salt until smooth. If the sauce is too thick, add more water, a tablespoon at a time, until the desired consistency is reached.

    Serve the warm falafel with tahini sauce drizzled on top or on the side for dipping.
