Filling Preparation

    Mix the Filling Ingredients

    In a large bowl, combine the chopped walnuts, chopped pistachios, ground cinnamon, and granulated sugar. Mix well to ensure the nuts are evenly coated with the sugar and spices.

    Prepare the Filo Pastry

    Preheat your oven to 350°F (175°C). Melt the unsalted butter in a small saucepan or microwave. Lay out a filo pastry sheet on a clean surface and brush it lightly with melted butter. Repeat this step with 7 more sheets, layering them on top of each other to create a thick base.

    Add the Filling

    Spread a portion of the nut filling evenly over the layered filo sheets. Then, layer another 8 sheets of filo, brushing each with melted butter, on top of the filling. Repeat this process of adding filling and layering filo until all filling is used, finishing with a top layer of 8 filo sheets.

    Cut the Baklava

    Using a sharp knife, cut the layered baklava into diamond or square shapes, making sure to cut through all layers. This will make it easier to serve once baked.

    Bake the Baklava

    Place the baklava in the preheated oven and bake for about 45 minutes, or until the top is golden brown and crisp.

Syrup Preparation

    Make the Honey Syrup

    While the baklava is baking, prepare the syrup by combining granulated sugar, water, honey, and vanilla extract in a saucepan. Bring to a boil over medium heat, then lower the heat and let it simmer for about 10 minutes until slightly thickened.

    Soak the Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over it, ensuring that it seeps into all the cuts. Allow the baklava to cool completely before serving.
