Method
Steak Souvlaki Preparation

Marinate the Steak
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Cut the steak into 1-inch cubes and add to the marinade. Mix well to coat and let marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Once marinated, thread the steak cubes onto the skewers. Leave a little space between each piece for even cooking.

Prepare the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, sliced cucumber, and sliced red onion. Drizzle with olive oil and red wine vinegar, and season with salt and black pepper. Toss to combine.
Serving

Prepare Pita and Sides
Warm the pita bread in a dry skillet or microwave. Cook rice pilaf or French fries according to package instructions. For Feta fries, sprinkle crumbled feta cheese over hot fries.

Plate the Dish
Serve the skewers of steak with the side salad, tzatziki, and pita bread. Add your choice of rice pilaf, French fries, or feta fries.
