Shrimp Preparation

    Marinate the Shrimp

    In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the jumbo shrimp and toss until they are well coated. Cover and refrigerate for at least 30 minutes.

    Skewer the Shrimp

    Preheat the grill to medium-high heat. Thread marinated shrimp onto skewers, about 6 shrimp per skewer.

Tzatziki Sauce Preparation

    Make the Tzatziki

    In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well and refrigerate until ready to serve.

Side Salad Preparation

    Prepare the Salad

    In a large bowl, combine mixed greens, cherry tomatoes, sliced cucumber, and red onion. Drizzle with olive oil and red wine vinegar, and season with salt and black pepper. Toss to combine.

Cooking the Shrimp

    Grill the Shrimp

    Place the skewers on the preheated grill and cook for about 2-3 minutes on each side until the shrimp are opaque and cooked through.

Serving

    Assemble the Dish

    Serve the grilled shrimp skewers with a side of tzatziki sauce, pita bread, side salad, and your choice of rice pilaf, French fries, or feta fries.
