    Sauté the Onions and Garlic

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Cook the Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    Mix the Filling

    In a large bowl, combine the cooked spinach mixture, crumbled feta cheese, beaten egg, salt, black pepper, and nutmeg. Mix well until combined.

Assembling and Baking

    Prepare the Puff Pastry

    Preheat the oven to 375°F (190°C). Roll out the puff pastry sheets on a lightly floured surface to smooth out any creases.

    Fill the Pastry

    Cut each puff pastry sheet into squares or rectangles. Place a generous spoonful of the spinach-feta filling in the center of each piece.

    Seal the Pastry

    Fold the pastry over the filling to create a triangle or rectangle shape. Press the edges firmly to seal. You can use a fork to crimp the edges if desired.

    Add Toppings

    Brush the tops of the pastries with a little olive oil or beaten egg wash, then sprinkle with sesame seeds.

    Bake

    Place the assembled spanakopita on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown and puffed.

    Remove from the oven and let cool for a few minutes before serving. Enjoy warm!
