    Soak the Chickpeas (if using dried)

    If using dried chickpeas, soak them in water overnight. Drain and rinse before using. If using canned chickpeas, simply drain and rinse.

    Blend Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but well combined.

    Add Flour

    Add the flour to the mixture and pulse a few more times until incorporated. The mixture should hold together when formed into a ball.

    Chill Mixture

    Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes to help the flavors meld and make it easier to shape.

Cooking

    Heat Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Form the Falafel Balls

    Using your hands or a scoop, form the falafel mixture into balls or patties (about 1.5 inches in diameter).
