Method

Rice Pilaf Preparation

    Sauté the Aromatics

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Rice

    Add the long-grain rice to the saucepan, stirring to coat the rice in the oil and mix with the onions and garlic. Add the chicken broth, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

Vegetable Toppings Preparation

    Prepare the Vegetables

    While the rice is cooking, prepare the vegetable toppings. Dice the tomatoes and cucumber, shred the lettuce, and slice the red onion. Set aside in a large bowl.

Marinated Garbanzo Beans Preparation

    Marinate the Beans

    In a bowl, combine the drained garbanzo beans, olive oil, lemon juice, cumin, salt, and black pepper. Toss well and let marinate for at least 10 minutes.

Tzatziki Sauce Preparation

    In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Stir until smooth and combine well. Chill in the refrigerator until ready to serve.

Assembly

    Once the rice is ready, fluff it with a fork and divide it into serving bowls. Top with the marinated garbanzo beans, prepared vegetables, kalamata olives, and crumbled feta cheese. Serve with a generous dollop of tzatziki sauce on the side.
