Cooking the Rice

Rinse the Rice
Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.

Simmer
Once boiling, reduce the heat to low and cover. Let it simmer for about 20 minutes or until the rice is tender, stirring occasionally to prevent it from sticking.
Making the Pudding

Add Sugar and Flavorings
After the rice is tender, stir in 3 tbs of sugar, 1 tsp of vanilla extract, 1 tsp of ground cinnamon, and 1 tsp of ground nutmeg. Mix well.

Thicken the Pudding
Continue to cook on low heat for an additional 10-15 minutes, stirring frequently, until the mixture thickens to your desired consistency.
Serving

Add Toppings
Remove from heat and stir in 1 cup of raisins and a cinnamon stick. For added texture, sprinkle in 0.5 cup of chopped nuts if desired.

Cool and Serve
Let the rice pudding cool for a few minutes before serving. Can be enjoyed warm or chilled.
