Stuff the Grape Leaves
Place a grape leaf on a flat surface, shiny side down. Add about 1 tablespoon of filling at the base of the leaf, fold the sides over, and roll tightly. Repeat until all filling is used.

Cook the Dolmades
Place dolmades seam side down in a pot. Add water to cover, bring to a boil, then reduce heat and simmer for 30 minutes. Allow to cool slightly before serving.
Falafel

Prepare the Mixture
In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, and salt. Blend until smooth, then refrigerate for 30 minutes.

Form the Falafel Balls
Once chilled, form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Heat oil in a deep pan. Fry falafel in batches for 3-4 minutes on each side until golden brown. Drain on paper towels.

Bake the Spanakopita
Preheat oven to 375°F (190°C). Bake for 30-40 minutes until golden brown. Let cool slightly before cutting into pieces.
Hummus

Blend the Ingredients
In a food processor, combine canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth, adding more water if needed for desired consistency.

Serve the Hummus
Transfer hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika if desired. Serve with pita or veggies.
