Method

Preparing the Lamb Souvlaki

    Marinate the Lamb

    In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Cut the leg of lamb into 1-inch cubes and add to the marinade. Stir well to coat the lamb evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

    Assemble the Skewers

    Preheat the grill or grill pan over medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is browned and cooked to your desired doneness.

Making Tzatziki Sauce

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean kitchen towel.

    Mix the Ingredients

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill. Mix well until smooth and creamy.

Preparing the Side Salad

    Prepare the Vegetables

    Chop the mixed greens, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.

    Assemble the Salad

    In a large bowl, combine the prepared vegetables. Crumble feta cheese on top.

    Dress the Salad

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper. Drizzle over the salad and toss gently to combine.

Serving

    Warm the Pita Bread

    Warm the pita bread on the grill or in a dry skillet for a minute on each side until soft.

    Prepare either rice pilaf or fries (French fries or feta fries) according to package instructions or your preferred recipe.

    On a serving plate, arrange the skewers of lamb, side salad, tzatziki sauce in a small bowl, and pita bread. Serve with your choice of rice pilaf or fries.
